Cotton Candy Cupcakes





These Cotton Candy Cupcakes were soo yummy! I saw them on Bakingdom and changed the recipe slightly to fit my taste. When you are baking these cupcakes your house will smell like a giant cotton candy cupcake factory! Let's get started:)  

You can use this vanilla cupcake recipe or use a white cake mix:) 
3 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 sticks butter
1 1/2 cups sugar
4 large eggs
2 teaspoons pure vanilla extract
1 1/4 cups milk
1/2 cup of cotton candy
Pink food coloring

Step 1: Preheat your oven to 350 degrees and line your cupcake pan with wrappers.

Step 2:  Whisk together flour and baking powder. In a different mixing bowl cream together butter and sugar until light and fluffy. Add the eggs one at a time and beat in vanilla.

Step3: Add flour mixture and milk alternately, starting and ending with flour. Now stir in the cotton candy. I also added some pink food coloring, this is optional! Use an ice cream scoop to place batter in liners.

Step 4: Bake for 18-20 minutes, to test the cupcakes place a toothpick in the center of the cupcake. If it comes out clean they are done. 



The Frosting
1 cup of cotton candy
5 teaspoons of heavy cream
1 +1/2 sticks of butter
4 cups of confectioners sugar
1/2 tsp of vanilla

Step 1: In a small bowl place the cotton candy inside, next pour the heavy cream over the cotton candy (this will melt the cotton candy to a liquid). Whisk the mixture until it is smooth and clump free.

Step 2: In a medium bowl cream together the butter and confectioners sugar. Blend in the mixture from step 1 and add in the vanilla. I used pink cotton candy and my frosting was the perfect pink color! No coloring needed! 

I topped off the cupcakes with balls of cotton candy!

Chocolate Chip Cookie Dough Cupcakes


If you love chocolate chip cookie dough you guys will love these! These cupcakes are topped with cookie dough that is safe to eat because there are no eggs! Who doesn't love eating cookie dough?!

3/4 cup butter
1 cup + 1 Tablespoon light brown sugar 
2 teaspoons vanilla extract
1 and 1/4 cups all-purpose flour
7 Tablespoons milk
1 and 1/2 cups mini chocolate chips

Step 1: With an electric mixer cream together the butter and brown sugar, next add in the vanilla.

Step 2: Stir in the flour until doughy. Beat in the milk, now we can fold in our chocolate chips

Step 3: Pipe onto your cupcakes and enjoy:)

Green Velvet Cupcakes


These cupcakes have to be my favorite cupcakes to make. They are so yummy! Every time I make this recipe they always comes out AMAZING! I got this recipe from Paula Deen so of course they are delish. I recommend these for anyone who is looking to try a new recipe out and to also impress your friends and family.

Here is the recipe:

Cupcake Batter
  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tablespoons green food coloring
  • 1 teaspoon white distilled vinegar
  • 1 teaspoon vanilla extract
Frosting Recipe
  • 1 pound cream cheese, softened
  • 2 sticks butter, softened
  • 1 teaspoon vanilla extract
  • 4 cups sifted confectioners' sugar
Now for the directions, as long as you follow every step they will come out great, no need to get baking anxiety! I find that when i heat the oven to 370 instead of 350 my cupcakes rise extra high and get that nice rounded top. Just note that since your oven will be heated 20 degrees higher it will bake slightly faster.



Preheat the oven to 350 degrees F. Line 2 (12-cup) muffin pans with cupcake papers.
Step 1: In a medium mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. 

Step 2: In a large bowl gently beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla with a handheld electric mixer. 

Step 3: Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined.
Step 4: Divide the batter evenly among the cupcake tins about 2/3 filled. Bake in oven for about 20 to 22 minutes, turning the pans once, half way through. Test the cupcakes with a toothpick for doneness. Remove from oven and cool completely before frosting.


For the Cream Cheese Frosting:
Step 1: In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth.

Step 2: Add the sugar and on low speed, beat until incorporated. Increase the speed to high and mix until very light and fluffy. You can use a piping bag to pipe the icing on or you can just spread it on top.
