Chocolate Chip Cookie Mix in a Jar

I finally got around to making a chocolate chip cookie mix in a mason jar! Yay! I decided to decorate this cute for Mother's Day. 

Here's what will go into the jar:


  • 1 3/4 cups flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 1/2 cups chocolate chips
On a separate card you can write out these instructions:

  • Preheat oven to 375
  • Beat 3/4 cup butter, 1 egg and 3/4 tsp. vanilla.
  • Add in cookie mix and stir. 
  • Roll into balls and place on baking sheet.
  • Bake for 9-11 minutes.

Italian Puff Cookies


Every Easter my family and I make these puffs! They are a must for our Easter and I hope you all enjoy them as much as we do! 

Cookies

4 eggs
1/2 cup sugar
1/2 cup vegetable oil
1 tbsp. vanilla extract
1 tsp. salt
2 tbsp. baking powder
3 cups flour

Step 1: Pre-heat oven to 325 degrees. Mix all wet ingredients together with a mixer. Next, add all dry ingredients into a separate bowl and whisk together. Slowly add the dry ingredients into the wet, dough will form. 

Step 2: Roll dough into small balls, place in greased sheet and bake for 6-8 minutes or until puffy. Be careful not to over-bake! 

Icing

Powdered sugar
Lemon juice
Water
Food coloring

For the icing the measurements are not precise. 

Step 1: Place about 1/2 cup powdered sugar into a bowl, squeeze in some lemon juice (for flavor) and coloring of choice. Next, slowly add in water. You will want the icing to be a medium consistency, I usually have to play around with adding more water or more sugar to perfect it! 

Step 2: Once cookies are cooled dip in frosting! My favorite part:) Store these in an air tight container to stay moist.

Girl Scout Samoas Cupcake



All I can say is YUMM! These were a hit, everyone who tried them fell in love! Samoas are my favorite Girl Scout cookie and they taste amazing as cupcakes! 


Homemade Caramel

1 cup granulated sugar
6 tbsp. salted butter
1/2 cup heavy cream

Step 1: On medium heat place the sugar in a small pot, stir until melted into a liquid. You can refer to my video to see the process! 

Step 2: Add in the butter slowly, constantly mixing. Slowly add in the heavy cream, lower the heat and keep mixing. Let cool and store in a glass container. 

Frosting

1 cup salted butter
1 tsp. vanilla extract
2 cups confectioners sugar
2 tbsp. heavy whipping cream
Caramel

Step 1: Whip the butter and add in the vanilla. Slowly add in the confectioners sugar and cream. Once it is all blended you can add in as much caramel as you would like!

Toasted Coconut

Pre-heat oven to 325, spread coconut over baking sheet. Place in the oven, be sure to flip the coconut!

You can use either a chocolate cupcake or vanilla cupcake. Here are my videos for the recipes!



Once everything is made, frost the cupcakes, dip them in the toasted coconut and drizzle melted chocolate on top! 

Pink Enchantment Cupcakes 1949



Happy Fifties Friday everyone! This recipe came from the recipe book called Enjoy Good Eating Every Day. These were SO delicious, they tasted like something my grandmother would have baked. Let's get started!















Pink Enchantment Cupcakes

2 cups flour
1 & 1/4 cups sugar
2 & 1/2 tsps. baking powder
1 tsp. salt
1/2 vegetable oil
1/2 milk
1/4 cup maraschino cherry juice
1 tsp. vanilla
1 & 1/2 tsps. almond extract
3 egg whites

Step 1:
Combine all ingredients in large bowl with mixer. Next, add in the egg whites and mix until combined. Place in cupcake liners makes about 24. Bake at 350 for 16-18 minutes.

Petal Pink Frosting

2 egg whites
1 & 1/2 cups sugar
5 tbls. marachino cherry juice
1 tsp. light corn syrup
dash of salt
1 tsp. vanilla
1/2 tsp. almond extract

Step 1:
Add all ingredients into bowl, place over double boiler and use an egg beater to mix for 7 minutes or until peaks are stiff.

Step 2:
Add 2 marshmallows and mix until dissolved. Add cherries to the frosting and spread on the cupcakes!




Starbucks Double Chocolaty Chip Frappuccino Cupcake

It's time for another Starbucks recipe! Today I chose the Double Chocolaty Chip Frap because it was very request and also my second favorite drink from Starbucks (chai being the first). These were so delicious so let's get baking! 

Chocolate cupcakes 
2 ¼ cups flour
2 cups sugar
¾ cup cocoa powder
1 ½ teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup vegetable oil
1 cup strong coffee
3 large eggs
8 ounces sour cream
1 teaspoon vanilla extract
1 cup mini chocolate chips

Step 1:
In a large bowl mix the flour, sugar, cocoa powder, baking soda, baking powder, and salt. Next add the oil, coffee, and eggs. Beat at medium speed until smooth. Then mix in the sour cream, chocolate chips and vanilla.

Step2:
Place the batter (use a standard size ice cream scoop) in cupcake liners and bake at 350 for 18-20 minutes.

Whipped Cream Frosting

2 cups heavy cream
½ cup sugar
1 ½ teaspoon vanilla extract
8 oz. cream cheese

Step 1:
Blend all ingredients together until whipped. The peaks should be stiff.


I used a Wilton 1M tip and a piping bag to pipe on the frosting and topped off the cupcakes with mini chocolate chips and placed a green straw on the side to look like a Starbucks drink.

Where I Get My Girly Kitchen Equiptment


I get asked almost everyday and in every video where I get my cute pastel kitchen equipment from. Today I decided to post pictures of everything (well almost everything) and let you all know where I get it from! Many of these items are antiques and vintage collectibles so they may be hard to find, I will let you know where to find them though:) 




These adorable little birds are salt & pepper shakers which are vintage. I actually broke one last year and found them on Ebay so I bought a new set!

This spatula is from the Christmas Tree Shop.
There is nothing cuter than some girly straws! These Valentines ones I got from the dollar section at Target. 
 If you cannot find straws at Target you can also check TjMaxx, which is where I got these straws! Normally I get them from Etsy but more and more stores have been selling them lately! 
 This ice cream scooper is from a garage sale. 
My mom got me these scissors this past Christmas and she thinks she got them from Kmart.

 These adorable measuring cups are from Anthropologie. I was just at the store in NYC a few weeks ago and they have many different styles of these now!
 These colorful knives are from TjMaxx. 
These are vintage Pyrex bowls, I got these from Ebay. They can get quite pricey, so look around before you buy! 
 I love teacups! I have a collection of them and they are all vintage. I get them from yard sales and antique stores! 
 These darling cupcake wrappers are from Etsy. When you go to their website type in "candy cups" and thousands of these will pop up! You can bake in them like I do or just fill them with candy. The ones on the top are minis and the bottom ones are standard size.
These paper polka dot wrappers are from TjMaxx. If you can't tell by now I am slightly obsessed with TjMaxx!  

The stripped ones are from the Christmas Tree Shop.
I'm not sure where I got these from. But I do know that they are Martha Stewart brand!  
These little spice bowls are from Michael's Craft Store. 
 This mixer is a Kitchen Aid brand, I also have a stand mixer from them but I am not a fan of it. I decided to try this one out and I love it! I got it from Target.
These bowls came in a set for $5!! Once again this is from TjMaxx. 
This vintage mixer I got at an estate sale for $5! I couldn't pass it up. It is a sunbeam and you could find it on ebay or etsy.  



Starbucks White Chocolate Mocha Cupcakes

YAY! I'm so excited for another Starbucks cupcake recipe! This recipe was inspired by the white chocolate and macadamia nut cupcakes from the book 500 Cupcakes. 

Preheat oven to 350

Makes about 18 cupcakes

Cupcakes
2 sticks butter
1 cup sugar
2 cups flour
1 tsp. baking powder
1/2 tsp. salt
4 eggs
1tsp. vanilla extract
1/2 - 1 cup white chocolate chips
4 tbsp. espresso powder

Combine all ingredients together except for the chocolate chips. Mix with a blender. Next, stir in the chocolate chips. Place in liners and bake for 18-20 minutes.

Frosting
1 cup white chocolate chips
5 tbsp. milk
1 &1/2 cups confectioners sugar

Melt the chocolate on the stove. Careful not to burn! Add the chocolate into a bowl and mix with the rest of ingredients. I used a wilton 2D tip to frost the cupcakes!
